Vegetarian Meatloaf

  • 1 package vegetarian ground crumbles 12-14 ounces, depending on brand
  • 1 envelope Onion Soup Mix check to see if it is vegetarian
  • ¾ Cup water
  • 2 eggs
  • Cup ketchup
  • ¾ Cup plain dry breadcrumbs not Italian seasoned and not panko


To start:

  • Preheat oven to 350° F.
  • In a large bowl, add water and onion soup mix, stir until combined.
  • Stir in eggs and ketchup.
  • Add vegetarian ground crumbles and stir until well mixed.
  • Mix in breadcrumbs.


  • Prepare an 8”x8” pan with cooking spray or a light coating of oil.
  • Add vegetarian crumble mixture to 8”x8” pan.
  • Bake for 30-35 minutes 350° F, checking after 30 minutes.
  • After removing from oven, allow to cool 5 minutes and then serve.


Serving suggestions:

Refrigerate leftovers immediately.
