Mashed Potatoes in the Instant Pot (No Drain)

Equipment
- Instant Pot
Ingredients
- 1.5 pounds golden potatoes
- ½ Cup water
- 1 clove garlic or 1 tsp better than bouillon roasted garlic base
- 2 TBSP butter
- ¼ Cup whole milk
- ½ tsp kosher salt
- ⅛ tsp fresh ground pepper
Instructions
To start:
- This recipe works best in a 3 quart Instant Pot. If using a larger instant pot, please double the recipe or more to avoid the burn notice.
- Rinse the potatoes thoroughly.
- If you dislike skins in the mashed potatoes, and/or have time to peel, go ahead and peel the potatoes.
- Then cut the potatoes into 1.5 inch chunks.
- Don’t worry if not all pieces are 1.5 inches. This is common.
- There will be a lot of starch (white moisture) on the potatoes, don’t re-rinse the potatoes.
Place in instant pot:
- Stir.
- Add the potatoes to the liner.
Put the lid on the instant pot:
- Put the lid on and lock it.
- Set the valve to sealing if you have a sealing setting.
- Press “pressure cook” or “manual” or similar and then the +/- buttons until you get to 0010 for a 10 minutes cook time.
- Once the pot reaches pressure, the timer will begin and then a beep will be sounded.
- Set a timer for 15 minutes since the 10 minutes of cooking needs to happen, then 5 minutes of sitting.
- Next, do a pressure release.
- Do this either by turning the valve to venting or press the venting button, depending on your model.
Mash:
- Once the steam has been released, carefully remove the lid, and place it in the
lid holder. - Carefully remove the instant pot liner and place on a hot pad or potholder.
- Add the butter, milk, salt, and pepper to the liner.
- Using a potato masher, mash the potatoes and mix with the butter and milk until smooth and well combined.

Serving suggestions:
Serve the immediately with Vegetarian Meatloaf or your favorite entrée.
