Prep Time15 mins
Cook Time15 mins

  • Instant Pot

  • 1.5 pounds golden potatoes sliced into 1.5 inch pieces peeled or unpeeled
  • ½ Cup water
  • 1 tsp finely chopped/crushed garlic or better than bouillon roasted garlic base
  • 2 TBSP butter
  • ¼ Cup whole milk
  • ½ tsp kosher salt
  • tsp fresh ground pepper

Place in instant pot:

  • This recipe works best in a 3 quart Instant Pot. If using a larger instant pot, please double the recipe or more to avoid the burn notice.
  • Using the liner that came with the instant pot, add the water and garlic (or garlic base) to the liner.
  • Stir.
  • Add the potatoes to the liner.
  • Place the liner in the instant pot.

Put the lid on the instant pot:

  • Put the lid on and lock it.
  • Set timer for 10 minutes, then once timer has finished, allow to sit for 5 minutes then do a pressure release.

  • Add the butter, milk, salt, and pepper to the liner.
  • Using a potato masher, mash the potatoes and mix with the butter and milk until smooth and well combined.
  • Serve.

Serving suggestions:
Serve immediately with Vegetarian Meatloaf or your favorite entrée.  Refrigerate leftovers immediately.
