Banana Bread
Need a Hand
Servings: 1 loaf pan
Ingredients
- 1.5 Cups mushed bananas about 2 large
- ⅔ Cup sugar
- ⅓ Cup vegetable oil
- ½ tsp salt
- 2 large eggs beaten
- 1 ½ Cups flour
- 1 ½ tsp baking powder
- Cooking spray or shortening to grease pan
Instructions
To start:
- Preheat oven to 350° F.
- Using cooking spray or shortening (such as Crisco), grease the 9”x5” loaf pan, or an 8”x8” square pan.
- In a large bowl mix the mushed bananas with the sugar.
- Allow to mellow for 3 minutes, to let the juices of the bananas come out into the sugar.
- Add vegetable oil and salt and mix until creamy.
- Add the beaten eggs and stir well.
In a separate bowl:
- In a medium bowl mix the baking powder with the flour.
- Add the flour mixture to the banana mixture and stir until just mixed.
- It’s ok if there are lumps.
Bake:
- Bake for 55 minutes at 350° F.
- Check the center with a toothpick after 55 minutes to see if the bread needs another 5 minutes.
- Cooking times vary between ovens.
- If the toothpick comes out with dough on it, allow to cook for 5 more minutes, then repeat.
- If the toothpick comes out clean, remove from oven and cool completely on a wire rack on counter.

Serving suggestions:
Serve the same day with a nice cup of tea or coffee.
